Four Ingredients — Thank the Lord that He made food taste so good!
This makes THE killer dip. Serve with “water crackers”. Ritz and company will break apart. This dip made a psychiatrist dance around our kitchen and sing the song, “I’m in Heaven”. Promise; she did pretty good, too. Also, you couldn’t ask for a better treatment for trout or any white/pink fish. Here’s that recipe.
6 ounces freshly grated parmesan cheese
2 cans of artichoke hearts — in water, NOT OIL! — total of 28 oz. canned chokes
1 1/2 Cups real mayonnaise — fake stuff will separate and go creepy on you
1 tsp cayenne pepper
16 oz firm water crackers
Couldn’t be easier. Drain the chokes and squeeze out the water. Quarter the hearts (if they are not quartered already) and cut hose pieces in half. Put chokes, cheese, mayo, and cayenne in a medium mixing bowl and fold all together.
Spoon out into a 9″ round baking dish/glass pie dish. Smooth it out. I sprinkle 1/3 with more cayenne, 1/3 in the middle with black pepper, and 1/3 with paprika. That way, folks can gravitate to their own preference.
Bake for 30 minutes at 350. Broil for a few until the top is starting to brown. Serve hot.
