			<content:encoded><![CDATA[<p>The only time that white, bulk mushrooms are preferred is for stuffing.  Crimini (browns) and portabellos just don&#8217;t work as well, although they saute much better.  Try for mushrooms that are 1.5 inches to 2.5 inches in diameter &#8212; any larger results in too much stuffing per bite.</p>
<p>I have also used the same recipe, but substituted in crab meat and capers for the chorizo.</p>
<p>INGREDIENTS</p>
<ul>
<li>8 oz fresh chorizo (casings removed)</li>
<li>1/2 Cup minced onion/shallots</li>
<li>3 cloves garlic, minced</li>
<li>4 oz cream cheese, softened</li>
<li>1/2 Cup green onion, chopped</li>
<li>1/4 Cup fresh cilantro, chopped</li>
<li>1/4 tsp ground cumin</li>
<li>1/8 tp ground coriander</li>
<li>white mushroom caps, prepared</li>
<li>small slices of mild cheese (Asiago, cheddar, provolone, etc.)</li>
<li>cilantro, garnish</li>
</ul>
<p>PROCESS</p>
<ol>
<li>Preheat oven to 350.</li>
<li>Set a small pot of water to boiling.</li>
<li>Prepared mushroom caps as follows:  Cut away dried out stem parts and discard.  Break out rest of stem from cap and place on cutting board.  Use a &#8220;sharp&#8221; spoon edge or grapefruit spoon and carve out inside of cap.  Be careful not to go through the cap.</li>
<li>Chop up the part of the mushrooms that was removed.</li>
<li>Heat medium skillet to medium and add chorizo, onion and garlic. Cook 5 minutes or so until broken up and half done.  Add chopped mushroom bits and continue to cook.  If too dry, add a splash of water, wine, or broth.  After fully cooked and crumbly, drain well.  I rinse just a bit with a really quick blast of hot water to remove some grease.</li>
<li> In medium bowl, mix cooked hot mixture with all other ingredients.  Spoon into prepare mushroom caps just to the point of being level.</li>
<li>Take your baking dish and pre-warm it with hot tap water.  Quickly place loaded caps in the dish.  Carefully add enough of the boiling water to the dish to reach a level of about 1/2 inch.   This keeps the caps from drying out while they cook.</li>
<li>Bake for 20 minutes (I use convection for 15).  Cover each cap with a slice of Asiago cheese.  Bake another 5 minutes.  Remove and garnish.  Be careful about hot steam when opening oven.</li>
<li>You&#8217;ll be tempted to broil the cheese to brownness, but that will make it difficult to eat as the cap will break up when cutting on the plate.</li>

			<content:encoded><![CDATA[<p>Here is a super low-carb main course that is almost easy to make.  4-6 servings.  Can be made with parmesan cheese, but more creamy and just better if you can locate a softer romano cheese that has not been aged for very long.</p>
<p>INGREDIENTS</p>
<ul>
<li>4 slices thick bacon</li>
<li>3 large chicken breasts, boneless/skinless</li>
<li>1 tsp black pepper, coarsely ground</li>
<li>1/2 tsp salt</li>
<li>2 Tbs chicken broth</li>
<li>6 cloves garlic, minced finely</li>
<li>1.5 Cups whipping cream</li>
<li>1.5 Cups softer Romano cheese</li>
<li>3 Tbs parsley, chopped</li>
<li>fettuccini noodles for those who want it</li>
</ul>
<p>PROCESS</p>
<ol>
<li>Cook bacon in skillet, reserving the drippings.  Crumble and set aside.</li>
<li>Season the chicken breasts and brown in drippings.  Add broth.  Cover and cook for 20 minutes until fully cooked.</li>
<li>Those not having noodles will want to have a chicken breast whole.  Dice remaining meat into bite-sized pieces and set aside.</li>
<li>Start boiling the noodles.</li>
<li>Add garlic to skillet and cook for 1-2 minutes.  Stir in cream.  Cook for about 5 minutes until starting to thicken.  Turn off heat and whisk in cheese and parsley.  Add some heated chicken broth or milk if too thick.</li>
<li>Mix in the diced chicken.  Toss in the noodles.</li>
<li>Plate and sprinkle with chopped bacon bits.  Raw sliced green onion is also nice.</li>

			<content:encoded><![CDATA[<p>This is a nice side dish to go with beef or lamb and have a very mild onion flavor.  Get leeks that have a long white shank, and do not remove all of the root at first.</p>
<p>INGREDIENTS:</p>
<ul>
<li>4-6 leeks with long white shanks</li>
<li>4 Tbs butter, salted</li>
<li>1 Cup white wine or vegetable/chicken stock</li>
<li>1 sprig fresh thyme</li>
<li>1 bay leaf</li>
<li>1/4 Cup parsley, chopped</li>
</ul>
<p>PROCESS:</p>
<ol>
<li>Just above the point where the leek begins to turn green, cut off the green.  Can either discard or use to make a vegetable stock.  Do not remove the root end yet, since that part is keeping the leek together.  Split the shank with a sharp knife down the middle.  Rinse the leeks well since there will be some soil in there, pulling back the layers a bit to allow water to each part.</li>
<li>Heat butter in larger skillet and place leeks in with flat part down.  Cook rather high for 2 minutes until browned.  Turn over and cook another 2 minutes.</li>
<li>To this skillet, add wine, bay leaf, and thyme.  Cover and simmer for 20-25 minutes until leeks are getting tender.  Add parsley and cook 5 more minutes.  If wine evaporates, add water or wine as needed.</li>
<li>Inform guests who are new to leeks that they can eat all but the last bit toward the root.  Start from the green portion, slicing off a bite-sized portion while maintaining the integrity of the form.  Eating one layer at a time is not the ideal experience.</li>

			<content:encoded><![CDATA[<p>This is a low-carb side dish that my wife really loves.  Fry in olive oil for better health.</p>
<p><strong>INGREDIENTS</strong>:</p>
<ul>
<li>1 pound frozen zucchini slices, thawed and chopped well</li>
<li>1 tsp salt</li>
<li>ground black pepper</li>
<li>1 large egg, beaten</li>
<li>1 medium onion, chopped</li>
<li>1/2 Cup flour (or Atkins thickener)</li>
<li>olive oil for frying</li>
</ul>
<p><strong>PROCESS</strong>:</p>
<ol>
<li>Thaw the zucchini and chop.  Mix in salt.  Drain excess water away in colander.  I bang the colander into the sink to force out as much water as possible, mix and bang some more.</li>
<li>Put in small bowl.  Add pepper, beaten egg, and chopped onion.  Mix.  Add flour/thickener and mix.</li>
<li>Heat enough oil in pan to get 1/4 inch deep or so.  Add 2 tsp worth of mixture per fritter and cook for about 2 minutes.  Keep fritters about 1/2 inch apart.  Turn once and press down to get other side flat.</li>
<li>Remove from oil to plate covered with paper towels.</li>
</ol>

<li>1/2 C walnuts, pecans, or almond slivers</li>
</ul>

<li>1/3 pound thick bacon, cooked well and chopped</li>
</ul>
<p>&#8212;&#8212;&#8212;&#8211;</p>
<ul>
<li>2 Tbs balsamic vinegar</li>
<li>1 Tbs honey</li>
<li>1 tsp Dijon mustard</li>
<li>1/4 tsp black pepper</li>
<li>1/4 C olive oil</li>
</ul>
<p>&#8212;&#8212;&#8212;</p>
<ul>
<li>3-6 C prepared raw spinach (or mixed greens)</li>
<li>4 oz feta cheese, crumbled well</li>
<li>1/4 C chopped red onion</li>
<li>1/2 C dried cranberries, chopped as halved or quartered</li>
</ul>
<p><strong>PROCESS</strong>:</p>
<ol>
<li>Candy the nuts.  Pour 1/4 C sugar into small sauce pan and heat.  As melts, add nuts and stir with a teaspoon to coat the nuts with melted sugar.  Cook for about 5 minutes on medium heat.  Pour out onto baking sheet covered with baking parchment and separate nuts.  Set aside when cool.</li>
<li>Cook the bacon to desired crispness and cool.  Remove excess fat.  Chop to bits.</li>
<li>In larger bowl, mix vinegar, honey, pepper, mustard, and then oil.  Use whisk to blend well.</li>
<li>Just before serving, toss in the spinach/greens and mix really well.  Can either toss in the remaining ingredients or sprinkle on top.  Add walnuts on top last and enjoy.</li>

<p>The &#8220;research&#8221; supporting &#8220;Green politics&#8221; is both thin and politically-generated.  Some of the Environmentalists &#8212; the leaders &#8211; are flatly EVIL.  Their own words and actions will bear this out to the reader shortly.</p>
<p>Who can be blamed for exterminating more humans than any other?  Hitler (6-7 MM)?  Stalin (10-14MM)?  Mao (60-68 MM)?  No &#8211; none of these.  The book <em><a href="http://www.straightdope.com/columns/read/2428/was-rachel-carson-a-fraud-and-is-ddt-actually-safe-for-humans" target="_blank">Silent Spring</a></em>, published in 1962, killed more human beings than all of these combined.</p>

<p>The U.S. Environmental Protection Agency took up the cause and held hearings which lasted for nearly six months &#8212; and concluded that DDT should <span style="text-decoration:underline;"><strong>NOT</strong></span> be banned: the &#8220;scientific&#8221; evidence against the chemical was insignificant and dubious.</p>

<p>However, the determination was overturned with the EPA director, <a href="http://www.acsh.org/healthissues/newsid.442/healthissue_detail.asp" target="_blank">Bill Ruckleshaus</a> (see article from The American Counsel of Science and Health), overruled his agency&#8217;s findings and banned DDT anyway, later admitting that the reason was not scientific, but political in nature.</p>

<p>The ban in the US spread throughout the world with US threats to reduce American foreign aid to other nations which continued to utilize DDT to fight malaria.<a href="http://jiminmontana.files.wordpress.com/2012/01/ddt.jpg"><img class="alignnone size-full wp-image-1384" style="border-color:initial;border-style:initial;" title="ddt" src="http://jiminmontana.files.wordpress.com/2012/01/ddt.jpg?w=500" alt=""   /></a></p>
<p>Africa was hit the hardest as some 60 million died there from mosquito-vectored malaria within the first few years of the DDT ban.  <a href="http://www.policynetwork.net/environment/media/eu%E2%80%99s-%E2%80%9Cprecaution%E2%80%9D-ddt-threatens-lives-millions-africans-says-health-charity" target="_blank">Uganda states that 70,000 to 110,000 children currently die</a> there from malaria every year and has resumed the wise use of DDT as a spray indoors, applied twice annually.</p>

<p>A conservative estimate of people who have died from malaria since the DDT ban is 140,000,000 souls.</p>

<p>With the ban of DDT, the infection surged immediately.  The ban remained &#8211; and still remains, even though there is MUCH evidence that DDT (properly used) has minimal negative effects on the environment and may be nearly &#8220;harmless&#8221; to humans.  Spraying a house with small amounts of DDT costs $1.44 per year; alternatives are five to 10 times more, making them unaffordable in poor countries.</p>

<h3>Here comes the evil . . .</h3>
<p><span style="text-decoration:underline;">Pro 8:36 KJV &#8211; But he that sinneth against me (God) wrongeth his own soul:<strong> all they that hate me love death</strong>.</span></p>
<p>It is estimated that some 100 MM to 500,000,000 lives have been saved by the application of DDT to homes and crops.  The fact that DDT saves lives might account for part of the hostility toward it. <a href="http://www.humanevents.com/article.php?id=4460" target="_blank">Alexander King</a>, founder of the Malthusian Club of Rome, wrote in a biographical essay in 1990:</p>
<p><strong>&#8220;My own doubts came when DDT was introduced. In Guyana, within two years, it had almost eliminated malaria. So my chief quarrel with DDT, in hindsight, is that it has greatly added to the population problem.&#8221; </strong></p>

<p><strong>&#8220;People are the cause of all the problems. We have too many of them. We need to get rid of some of them, and this (referring to malaria deaths) is as good a way as any.&#8221; </strong></p>
<p>The motivation and bias behind books like <em>Silent Spring</em> and Environmentalist &#8220;science&#8221; is both religious and political.  The POWER behind Environmentalism is entirely political, garnering centralized power and influence over sheeple like you and me.  The sin of people like Rachel Carlson is a callousness to human suffering, having traded away natural kindness and fraternity for a blind pantheism and far-reaching globalism.  Human beings are viewed with a jaundiced eye.  You and I are compared to viruses, &#8220;consuming the Host&#8221;.  Africans, with flies buzzing around their huts and faces, have a poor quality of life anyway &#8212; so the callous Environmentalist can let them die off.   Can cause them to die &#8212; through bogus decrees here on the other side of the planet.</p>

<p>Allow me to quote a fellow blogger:</p>
<p>Like the high priests of global warming, Rachel Carson knew what she was doing. She claimed DDT would actually destroy <em>all life on Earth </em>if its use was continued – the “silent spring” of the title is a literal description of the ecological apocalypse she forecast. <span style="text-decoration:underline;">She misused a quote from Albert Schweitzer about atomic warfare, implying the late doctor agreed with her crusade against pesticide by dedicating her book to him… when, in fact, Schweitzer viewed DDT as a “ray of hope” against disease-carrying insects.</span> Some of the scientists attempting to debunk her hysteria went so far as to <em>eat </em>chunks of DDT to prove it was harmless, but she and her allies simply ignored them, making these skeptics the forerunners of today’s “global warming deniers” – absolutely correct and utterly vilified. William Ruckleshaus disregarded nine thousand pages of testimony when he imposed the DDT ban. Then as now, the science was settled… beneath a mass of callous politics, bias, and ideology, and <a href="http://en.wikipedia.org/wiki/Megalomania" target="_blank">megalomania</a>.</p>

<p>Another way <em>Silent Spring </em>forecast the global-warming fraud was its insistence that readers ignore the simple evidence of reality around them. One of the founding myths of modern environmentalism was Carson’s assertion that bird eggs developed abnormally thin shells due to DDT exposure, leading the chicks to be crushed before they could hatch. As detailed in this <a href="http://spectator.org/archives/2005/02/25/ddt-fraud-and-tragedy">American Spectator </a>piece from 2005, no honest experimental attempt to produce this phenomenon has ever succeeded – even when using concentrations of DDT a hundred times greater than anything that could be encountered in nature. Carson claimed thin egg shells were bringing the robin and bald eagle to the edge of extinction… even as the bald eagle population doubled.</p>

<p>The DDT ban isn’t the only example of environmental extremism coming with a stack of body bags. Mandatory <a href="http://www.cnsnews.com/Public/Content/Article.aspx?rsrcid=48340">gas mileage standards</a> cause an additional 2,000 deaths per year, by compelling automakers to produce lighter, more fragile cars. The <a href="http://www.globalpolicy.org/component/content/article/217/46156.html">biofuel mania </a>has led resources to be shifted away from growing food crops, resulting in higher food prices and starvation. Worst of all, the economic damage inflicted by the environmentalist religion directly correlates to life-threatening reductions in the human standard of living. The recent earthquake in Haiti is only the latest reminder that poverty kills &#8211; and collectivist politics are the most formidable engine of poverty on Earth.</p>
<p>Environmental extremism is a breathless handmaiden for collectivism. It pours a layer of smooth, creamy science over a relentless hunger for power. Since the boogeymen of the Green movement threaten the very Earth itself with certain destruction, the environmentalist feels morally justified in suspending democracy and seizing the liberty of others. &#8220;Of <em>course </em>we can’t put these matters to a vote! The dimwitted hicks in flyover States can’t understand advanced biochemistry or climate science. They might vote the wrong way, and we can’t risk the consequences!&#8221; The phantom menaces of the Green movement can only be battled by a mighty central State. Talk of representation, property rights, and even free speech is madness when such a threat towers above the fragile ecosphere, wheezing pollutants and coughing out a stream of dead birds and drowned polar bears.</p>

<p>Green philosophy provides vital nourishment for the intellectual vanity of Leftists, who get to pat themselves on the back for saving the world through the control-freak Statism they longed to impose anyway. One of the reasons for the slow demise of the climate-change nonsense is that it takes a long time to let so much air out of so many egos. Calling “deniers” stupid and unpatriotic was very fulfilling. Likewise, you’ll find modern college campuses teeming with students – and teachers – who will fiercely insist that DDT thins egg shells and causes cancer. <strong>Environmentalism is a primitive religion which thrives by telling its faithful they’re too sophisticated for mere common sense.</strong></p>

<p>The legacy of <em>Silent Spring </em>provides an object lesson in the importance of bringing the global-warming con artists to trial. No one was ever forced to answer for the misery inflicted by that book, or the damage it dealt to serious science. Today Rachel Carson is still celebrated as a hero, the secular saint who transformed superstition and hysteria into a Gospel for the modern god-state. The tactics she deployed against DDT resurfaced a decade later, in the <a href="http://www.ewg.org/node/8005">Alar scare</a> (also the government-orchestrated, bogus &#8220;<a href="http://www.21stcenturysciencetech.com/articles/spring01/nuclear_power.html" target="_blank">energy crisis</a>&#8221; of the Carter Administration). It’s a strategy that offers great reward, and very little risk. We need to increase the risk factor, and frighten the next generation of junk scientists into being more careful with their research. If we don’t, the Church of Global Warming will just reappear in a few years, wearing new vestments and singing new hymms… but still offering the same communion of poverty, tyranny, and death.</p>

<p>Prep Time: 15 minutes</p>
<p>Total Time: 4 hours</p>
<p>Serves: 10-12 thinner slices</p>
<p><strong>INGREDIENTS</strong>:</p>
<ul>
<li>2.5 Cups small pretzel twists</li>
<li>1/4 C packed dark brown sugar</li>
<li>1/2 C melted butter</li>
<li>&#8212;&#8212;&#8212;</li>
<li>3/4 C butter, cut into pieces</li>
<li>3/4 C semi-sweet chocolate chips</li>
<li>3/4 C packed brown sugar</li>
<li>2/3 C granulated sugar</li>
<li>3 eggs, beaten</li>
<li>3 T whipping cream</li>
<li>4.5 tsp all-purpose flour</li>
<li>1 tsp vanilla</li>
<li>whipped topping and caramel for topping</li>
</ul>
<p><strong>PROCESS</strong>:</p>
<ol>
<li>Heat oven to 350 degrees.  In food processor, add 2 C pretzels and 1/4 C brown sugar.  Process until finely chopped.  Stir in melted butter.  Press this as a crust into bottom of 9-inch glass pie dish.  To compact the crumbs, you may use a smooth-bottomed measuring cup at first, and finish with another pie dish that&#8217;s just like the one you intend to bake &#8212; just place it over the crust and press.  Then twist just a bit and lift off cleanly.  Wax paper or baking parchment between will keep the crust from sticking to the upper dish for certain.</li>
<li>In medium bowl, microwave 3/4 C butter and chocolate chips on high for 1-2 minutes, stirring once until smooth.  Stir in 3/4 C brown sugar and the granulated sugar.  Stir in eggs.  Stir in whipped cream, flour and vanilla.  Pour into pie crust.</li>
<li>Bake 50 minutes or until center is set.  Cool about 3 hours.</li>
<li>Crush/chop the remaining 1/2 C pretzels coarsely.  Top each slice with whipped cream topping, caramel sauce, and a few crumbled pretzels.</li>
<li>Take an insulin shot and enjoy.</li>
</ol>
